At The Old Millhouse, our passion for good food is reflected in bespoke dining experiences created by expert private chefs, using Scotland’s finest seasonal produce.
Scotland has an incredible natural larder
Our passion for good food is mirrored in the exceptional dining experiences created by our expert private chefs and we want guests to savour the country’s finest produce. We’re proud to partner with private chefs who continually delight and surprise us with their culinary flair and ingenuity. Having worked in the most revered restaurants and catered for private families on exclusive islands, they are true testament to the concept of ‘let the food do the talking’.

Eating at home never tasted so good
Catering for private families and intimate groups is a highlight for our Chef’s, it’s what they do best, and enjoy the most. Whatever style of dining you desire, rest assured our talented culinary team will design the perfect menus to match. Often it’s the smallest of details that have the largest impact. Choosing the perfect wine accompaniment to enhance menus can sometimes be tricky. We’ve partnered with one of the best local wine merchants whose passion for the ‘blessed grape’ fuels everything they do. Their mantra is to only stock wines they would drink themselves.
Luxury private dining Scotland
Our in-house kitchens and our interior and exterior dining facilities make an ‘evening at home’ in Old Millhouse exceptional.
Dining in the Orangery
Our dining table in the Orangery seats up to ten, and can be styled simply or extravagantly. Flowers, table gifts, name cards, printed menus – we’re happy to help arrange the finishing touches, or if it’s pared-back and relaxed you’re after, we know that look too.

Meet our Chefs
We work with a small number of trusted private chefs, each bringing something quite different to the table. Some guests want a relaxed family supper with everyone in and out of the kitchen; others want a proper occasion with five courses and paired wines. Sally will talk it through with you before you arrive and help you find the right fit for your group.
Chef Jesse – A taste of Scotland

Chef Shaune Hall – Seasonal and understated
We are pleased to have FORACHEF Shaune Hall as Personal Chef at The Old Millhouse.
With experience across luxury resorts, boutique country house hotels and award-winning restaurants, Shaune brings a thoughtful, understated approach to dining. He works closely with seasonal Scottish produce, local suppliers and wild ingredients, creating food that respects both ingredient and place.
Whether relaxed family-style meals, informal entertaining or fine dining, every menu is bespoke. Shaune liaises personally with guests in advance, ensuring each dining experience is effortless, personal and memorable.

Chef Marco Scire – Italian roots, Scottish larder
Marco has been a professional chef for more than twenty years, and his love of food began in childhood in Italy. Before moving into private dining he cooked in fast-paced restaurant kitchens and small French bistros, and he has since worked extensively across Scotland’s great estates, castles and shooting lodges.
His cooking is rooted in Italian, French and British traditions, though he is endlessly curious – always looking for a new ingredient to work with or a dish to make his own. Every menu is shaped around what you want from the evening rather than what he wants to cook.
Marco works with guests on the menu in advance, or takes it entirely off your hands if you’d rather, sources the ingredients himself, cooks, serves, and leaves the kitchen exactly as he found it. Whether it’s a relaxed family supper or a full dinner in the Orangery, the evening is yours from beginning to end.

Try a wine flight for our Taste of Scotland menu or create a truly Scottish experience and serve our ‘Whisky Tasting Menu’ – 5 courses paired by a selection of whisky, mirroring the food and our small country’s renowned drink – imagine local Venison with a peaty Malt – delicious!

Seasonal Scottish produce
If the weather is fine – our outside BBQ kitchen and our team can cook up an amazing feast. Try Scottish Beef, Lamb, Langoustines caught that day, served with seasonal salads and sides. Just bask in the luxury and enjoy the conversation with our Chef and his team.
Whether you are planning a celebration or a relaxed evening at home, private dining with your own chef in Scotland transforms your stay into something truly memorable.
